  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 1/4 cup brown sugar
  • 1/4 cup water

Instructions

  1. Preheat the oven to 400°F. In a small bowl, mix together olive oil, minced garlic, thyme, rosemary, salt, and black pepper. Rub the mixture all over the chicken breasts.
  2. Place the seasoned chicken breasts in a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F. Remove from the oven and let rest for 5 minutes before slicing.
  3. While the chicken is baking, bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 15-20 minutes or until tender. Drain and return to the pot.
  4. Add milk and butter to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  5. In a medium saucepan, combine sliced carrots, brown sugar, and water. Bring to a boil, then reduce heat to a simmer. Cook for 10-15 minutes or until the carrots are tender and the liquid has thickened slightly.
  6. Serve the sliced garlic herb chicken alongside the creamy mashed potatoes and glazed carrots.
