Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 2 packs of instant ramen noodles (discard the seasoning packets)
  • 2 cups baby spinach
  • 2 green onions, sliced
  • 2 soft-boiled eggs (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
  3. Pour in the chicken broth, soy sauce, and sriracha. Bring the mixture to a boil.
  4. Add the ramen noodles to the boiling broth and cook according to package instructions, usually about 3-4 minutes.
  5. Stir in the cooked chicken and baby spinach, cooking for an additional 2 minutes until the spinach is wilted.
  6. Serve the ramen hot, topped with sliced green onions, soft-boiled eggs, and a sprinkle of sesame seeds if desired.

Notes

  • For added heat, increase the amount of sriracha or add sliced fresh chili peppers.
  • Substitute the chicken with tofu for a vegetarian option, and sauté it until golden brown before adding to the broth.
