Ingredients

- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cup feta cheese, crumbled
- 1/2 cup dried cranberries
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, feta cheese, dried cranberries, red bell pepper, red onion, and parsley. Toss gently to mix the ingredients evenly.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to coat all the ingredients.
- Let the salad sit for at least 15 minutes to allow the flavors to meld together.
- Serve chilled or at room temperature.
Notes
- For added crunch, consider adding 1/2 cup of chopped cucumber or a handful of sunflower seeds.
- Substitute the feta cheese with goat cheese for a different flavor profile.
