Description
Dublin Coddle is a traditional Irish stew made with sausage, potatoes, and a variety of seasonings, perfect for warming up on a chilly day.

- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 pound Irish sausage (or any good-quality sausage), cut into 1-inch pieces
- 1 pound potatoes, peeled and diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup chopped fresh parsley
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the sliced onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the sausage pieces to the pot and cook until browned on all sides, about 5-7 minutes.
- Stir in the diced potatoes, chicken broth, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover.
- Simmer for 30-40 minutes, or until the potatoes are tender.
- Remove the bay leaf and stir in the chopped parsley just before serving.
- Adjust seasoning if needed.
- Serve hot with crusty bread on the side for dipping.
Notes
- For a heartier stew, add carrots or celery along with the potatoes.
- For a vegetarian version, substitute the sausage with plant-based sausage and use vegetable broth instead of chicken broth.
