Ingredients

  • 1 pound ground pork (or chicken)
  • 1 cup shredded carrots
  • 1 cup chopped green cabbage
  • 1/2 cup sliced green onions
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground pork (or chicken) and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.
  2. Add the shredded carrots, chopped cabbage, green onions, garlic, and ginger to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  3. In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using). Pour this sauce over the stir-fried mixture and stir well to combine. Season with salt and pepper to taste.
  4. Push the stir-fry mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked, about 2 minutes. Once cooked, mix the eggs into the stir-fry.
  5. Remove from heat and garnish with chopped cilantro before serving.

Notes

  • For a vegetarian option, substitute the ground meat with tofu or tempeh and use vegetable broth instead of soy sauce for a lighter flavor.
