Instructions
- In a large bowl, combine the sliced cucumbers and salt. Toss well and let sit for about 15 minutes to draw out excess moisture.
- After 15 minutes, drain any liquid from the cucumbers and gently pat them dry with paper towels.
- In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, black pepper, and sugar until well combined.
- Add the drained cucumbers, red onion, parsley, and dill to the vinaigrette. Toss everything together until the cucumbers are evenly coated.
- Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature.
