Ingredients

- 2 medium zucchini, cut into sticks
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
- In another bowl, beat the eggs until well combined.
- Dip each zucchini stick into the egg mixture, allowing excess to drip off, then coat with the breadcrumb mixture, pressing gently to adhere.
- Arrange the coated zucchini fries in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Cook for 10-12 minutes, shaking the basket halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper to the breadcrumb mixture.
- Try using different types of cheese, such as mozzarella or cheddar, for a different flavor profile.
