Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy, based on preference)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium potatoes, diced (about 1 pound)
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.
  3. Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
  4. Stir in the chopped kale and cook for an additional 5 minutes until wilted.
  5. Lower the heat and add the heavy cream and Italian seasoning. Stir well and season with salt and pepper to taste. Heat through but do not boil.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream or use a plant-based cream alternative.
  • Add diced carrots or celery for extra vegetables and flavor. You can also use spinach instead of kale for a different twist.
