Description

A delicious and creamy pasta dish featuring shrimp and Jamaican jerk seasoning, perfect for a flavorful meal.

Ingredients

Scale
  • 8 ounces fettuccine pasta
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup coconut milk
  • 1 tablespoon Jamaican jerk seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
  3. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2 minutes until fragrant.
  4. Add the shrimp to the skillet and cook for 3-4 minutes, or until they turn pink and are cooked through.
  5. Pour in the coconut milk and stir in the Jamaican jerk seasoning, salt, and black pepper. Let the mixture simmer for 5 minutes to thicken slightly.
  6. Add the cooked fettuccine to the skillet, tossing to combine everything well. Cook for an additional 2 minutes to heat through.
  7. Remove from heat and stir in the chopped cilantro and lime juice before serving.

Notes

  • For a spicier kick, add extra jerk seasoning or a dash of hot sauce.
  • You can substitute the shrimp with chicken or tofu for a different protein option.
  • For a lighter version, use whole wheat pasta or zucchini noodles.
