Instructions
- In a mixing bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
- Add the rolled oats, mini chocolate chips, chopped nuts (if using), and salt to the mixture. Fold everything together until evenly distributed.
- Using a small cookie scoop or spoon, portion out the mixture onto a parchment-lined baking sheet.
- Place the baking sheet in the freezer for about 1-2 hours, or until the bites are firm.
- Once frozen, transfer the bites to an airtight container and store them in the freezer for up to 2 months.
