Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the semi-sweet chocolate chips.
- Scoop about 2 tablespoons of cookie dough and flatten it slightly in your palm. Place about a teaspoon of chocolate ganache in the center, then wrap the dough around the ganache, sealing it completely.
- Place the filled cookie dough balls on the prepared baking sheet, leaving space between each one.
- Bake for 10-12 minutes, until the edges are set but the centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
