Description

Chipotle Chicken Nachos are a delicious and hearty game-day treat, loaded with shredded chicken, cheese, and fresh toppings.


Ingredients

  • 2 cups tortilla chips
  • 1 pound cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1 lime, cut into wedges
  • 1 teaspoon chipotle powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, chipotle powder, salt, and pepper. Mix well until everything is evenly coated.
  3. On a large baking sheet, spread out the tortilla chips in an even layer.
  4. Spoon the chicken mixture evenly over the chips.
  5. Sprinkle the shredded cheddar and Monterey Jack cheeses generously over the top.
  6. Add diced tomatoes and jalapeños on top of the cheese.
  7. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped cilantro and diced avocado.
  9. Serve hot with sour cream and lime wedges on the side.
