- 2 cups tortilla chips
- 1 pound cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños (fresh or pickled)
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 1/2 cup sour cream
- 1 lime, cut into wedges
- 1 teaspoon chipotle powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, chipotle powder, salt, and pepper. Mix well until everything is evenly coated.
- On a large baking sheet, spread out the tortilla chips in an even layer.
- Spoon the chicken mixture evenly over the chips.
- Sprinkle the shredded cheddar and Monterey Jack cheeses generously over the top.
- Add diced tomatoes and jalapeños on top of the cheese.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped cilantro and diced avocado.
- Serve hot with sour cream and lime wedges on the side.
Notes
- For extra flavor, marinate the shredded chicken in lime juice and spices before cooking.
- Substitute the chicken with shredded beef or pulled pork for a different twist.
