A refreshing chilled soup made with avocados, lemon, and basil, perfect for summer.
Ingredients

- 2 ripe avocados, halved and pitted
- 2 cups vegetable broth
- 1 cup plain Greek yogurt
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup fresh basil leaves, packed
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon olive oil (for drizzling)
- Fresh basil leaves (for garnish)
- Lemon slices (for garnish)
Instructions
- In a blender, combine the avocados, vegetable broth, Greek yogurt, lemon juice, fresh basil, minced garlic, salt, black pepper, and cayenne pepper (if using). Blend until smooth and creamy.
- Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.
- Transfer the soup to a bowl and cover it with plastic wrap. Chill in the refrigerator for at least 1 hour to allow the flavors to meld.
- Once chilled, stir the soup gently and serve in bowls. Drizzle with olive oil and garnish with fresh basil leaves and lemon slices.
Notes
- For a spicier kick, add a diced jalapeño or a dash of hot sauce to the blender.
- Substitute the Greek yogurt with coconut yogurt for a dairy-free version.
