Description

A delicious and hearty Chicken Avocado Melt Sandwich that combines shredded chicken, creamy avocado, and melted cheddar cheese on whole grain bread.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a medium bowl, combine the shredded chicken, mashed avocado, Greek yogurt, lime juice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Heat a skillet over medium heat and add the olive oil.
  3. Spread the chicken and avocado mixture evenly on two slices of bread. Top with shredded cheddar cheese.
  4. Place the remaining slices of bread on top to form sandwiches.
  5. Carefully place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  6. Remove from the skillet, slice in half, and garnish with fresh cilantro if desired.

Notes

  • For a spicier kick, add diced jalapeños to the chicken mixture.
  • To make it lighter, substitute the Greek yogurt with low-fat yogurt or skip it altogether.
