Description
A delicious and hearty Chicken Avocado Melt Sandwich that combines shredded chicken, creamy avocado, and melted cheddar cheese on whole grain bread.

- 2 cups cooked chicken, shredded
- 1 ripe avocado, mashed
- 1/2 cup plain Greek yogurt
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 4 slices of whole grain bread
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Fresh cilantro, for garnish (optional)
Instructions
- In a medium bowl, combine the shredded chicken, mashed avocado, Greek yogurt, lime juice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Heat a skillet over medium heat and add the olive oil.
- Spread the chicken and avocado mixture evenly on two slices of bread. Top with shredded cheddar cheese.
- Place the remaining slices of bread on top to form sandwiches.
- Carefully place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from the skillet, slice in half, and garnish with fresh cilantro if desired.
Notes
- For a spicier kick, add diced jalapeños to the chicken mixture.
- To make it lighter, substitute the Greek yogurt with low-fat yogurt or skip it altogether.
