Description

A delightful dessert combining the rich flavors of cherry and amaretto in a classic tiramisu.


Ingredients

  • 2 cups brewed espresso or strong coffee, cooled
  • 1/2 cup amaretto liqueur
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1 cup fresh cherries, pitted and halved
  • Cocoa powder, for dusting

Instructions

  1. In a shallow dish, combine the cooled espresso and amaretto. Set aside.
  2. In a large mixing bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.
  4. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  5. Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
  6. Arrange half of the soaked ladyfingers in a single layer in the bottom of a 9×9-inch dish.
  7. Spread half of the mascarpone mixture over the ladyfingers, then layer half of the cherries on top.
  8. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  9. Cover and refrigerate for at least 4 hours, or overnight for best results.
  10. Before serving, dust the top with cocoa powder.

Notes

  • For a non-alcoholic version, substitute the amaretto with almond extract and use milk or almond milk instead of coffee.
  • Add a layer of chocolate shavings or grated dark chocolate between the layers for an extra indulgent treat.
