Butterscotch Graham Cracker Cheesecake Bars are a delicious dessert featuring a creamy butterscotch cheesecake filling on a graham cracker crust.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup butterscotch chips
- ½ cup sour cream
Instructions
- Preheat the oven to 325°F. Grease a 9×13-inch baking dish.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
- Bake for 10 minutes, then remove from the oven and let cool slightly.
- In a large mixing bowl, beat together the sugar and softened cream cheese until smooth and creamy.
- Add the vanilla extract and mix well.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until fully combined.
- Gently fold in the butterscotch chips.
- Pour the cheesecake mixture over the cooled graham cracker crust and spread evenly.
- Bake for 30-35 minutes, or until the center is set and the edges are lightly golden.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.
- Cut into bars and serve chilled.
Notes
- For a richer flavor, try adding a pinch of sea salt to the cheesecake mixture.
- You can also substitute chocolate chips for butterscotch chips for a different twist.
