Ingredients

  • 1 pound ground beef (80/20 blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1/4 cup mayonnaise
  • 1 medium onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar

Instructions

  1. In a skillet over medium heat, add olive oil and sliced onions. Cook, stirring occasionally, for about 15-20 minutes until the onions are caramelized. Remove from heat and let cool slightly.
  2. In a bowl, mix mayonnaise with half of the caramelized onions and balsamic vinegar. Set aside.
  3. In a large skillet, cook the ground beef over medium-high heat, breaking it apart with a spatula. Season with garlic powder, onion powder, salt, and pepper. Cook until browned and cooked through, about 7-10 minutes.
  4. To assemble the bowls, divide the salad greens among four bowls. Top each with cooked ground beef, cherry tomatoes, cucumber, shredded cheddar cheese, avocado slices, and a dollop of the caramelized onion aioli.
  5. Serve immediately and enjoy!
