Scale
- 2 pounds boneless, skinless chicken thighs
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon butter (optional, for extra richness)
- Chopped green onions (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the hot sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
- Add the chicken thighs to the bowl and toss until they are evenly coated with the sauce mixture.
- Arrange the chicken thighs in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- If using, melt the butter and brush it over the chicken thighs during the last 5 minutes of baking for added flavor.
- Remove from the oven and let rest for a few minutes before serving. Garnish with chopped green onions if desired.
Notes
- For a milder flavor, reduce the amount of hot sauce or mix in some honey for sweetness.
- Serve the buffalo chicken thighs with celery sticks and blue cheese dressing for a classic pairing.
