Description

A delightful Brown Sugar Peach Cake that combines the sweetness of brown sugar with fresh peaches for a delicious dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups fresh peaches, peeled and diced
  • 1 teaspoon cinnamon
  • 1 tablespoon granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix in the sour cream until well combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the diced peaches and cinnamon gently until evenly distributed.
  8. Pour the batter into the prepared baking pan and spread it evenly. Sprinkle the tablespoon of granulated sugar over the top.
  9. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract along with the vanilla.
