- 12 large Medjool dates, pitted
- 4 ounces Boursin cheese (garlic & herb flavor)
- 1/2 cup shelled pistachios, finely chopped
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice each date lengthwise on one side to create an opening, being careful not to cut all the way through.
- Stuff each date with approximately 1 teaspoon of Boursin cheese, pressing it gently to fill the cavity.
- In a small bowl, mix the chopped pistachios, honey, olive oil, sea salt, and black pepper until well combined.
- Place the stuffed dates on a baking sheet lined with parchment paper.
- Spoon the pistachio mixture over each stuffed date, pressing it down slightly to adhere.
- Roast in the preheated oven for 12-15 minutes, or until the dates are warm and the pistachios are lightly toasted.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicy kick, add a pinch of cayenne pepper to the pistachio mixture.
- Try using different flavored cheese spreads, such as herb or spicy varieties, for a unique twist.
