- 2 cups cooked brown rice
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1/2 cup ranch dressing
- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, drained, and rinsed)
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes before slicing.
- In a small bowl, mix the BBQ sauce and ranch dressing together until well combined.
- In a large bowl, layer the cooked brown rice as the base. Top with sliced grilled chicken, corn, black beans, cherry tomatoes, and avocado.
- Drizzle the BBQ ranch sauce over the top of the bowl and sprinkle with shredded cheddar cheese and chopped cilantro.
