- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey (or maple syrup)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine the mashed bananas, almond butter, honey, and vanilla extract. Mix until well combined.
- Add the rolled oats, baking soda, cinnamon, and salt to the banana mixture. Stir until everything is evenly incorporated.
- If using, fold in the chocolate chips and chopped nuts.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment overhang and let them cool completely on a wire rack before cutting into squares.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- You can also add dried fruits like cranberries or raisins for extra flavor and texture.
- For a protein boost, consider adding a scoop of your favorite protein powder to the batter.
