Description

A simple and healthy recipe for delicious banana oatmeal bars that make for a perfect snack.

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey (or maple syrup)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the mashed bananas, almond butter, honey, and vanilla extract. Mix until well combined.
  3. Add the rolled oats, baking soda, cinnamon, and salt to the banana mixture. Stir until everything is evenly incorporated.
  4. If using, fold in the chocolate chips and chopped nuts.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment overhang and let them cool completely on a wire rack before cutting into squares.

Notes

  • For a nut-free version, substitute almond butter with sunflower seed butter.
  • You can also add dried fruits like cranberries or raisins for extra flavor and texture.
  • For a protein boost, consider adding a scoop of your favorite protein powder to the batter.
