Baked Parmesan Zucchini Fries are a healthy and delicious alternative to traditional fries, coated in a crispy Parmesan and breadcrumb mixture.

- 2 medium zucchinis, cut into fries
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (preferably whole wheat)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- Cooking spray
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper and lightly spray it with cooking spray.
- In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
- In another bowl, beat the eggs until well combined.
- Dip each zucchini fry into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture. Place the coated fries on the prepared baking sheet in a single layer.
- Lightly spray the tops of the zucchini fries with cooking spray to help them crisp up.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the oven and let cool slightly before serving.
Notes
- For extra flavor, try adding a teaspoon of smoked paprika to the breadcrumb mixture.
- You can also substitute the zucchini with eggplant or sweet potatoes for a different twist.
